I have been looking for an excuse to make waffles for a while.

Correction:  I have been looking for an excuse to buy a waffle iron for a while.

I’m not sure why the obsession began. Benedicts, egg-topped pizzas and the occasional leftover-induced towering tostada have been my usual weekend jam. Maybe there’s something nostalgic and comforting about thoughts of crispy craters reflecting pools of syrup..round dense pillows soaking up caramelized streams and snow dusted flakes of sugar.

Maybe it’s just the changing of seasons and the feeling of winter nest building setting in? Probably.

Whatever it is — Sweet joy and golden buttermilk discs for all! The iron is hot and brunch is back in full savory swing.

Pass me a mimosa…this weekend involves mini rosemary cheddar waffle sandwiches.

Recipe: Mini Rosemary Cheddar Waffle Sandwiches


  • Standard Waffle Batter 1/2 the recipe (Heck, use Bisquick. I won’t tell…it’s your day off after all)
  • 1/2 Cup Grated Sharp Cheddar
  • 1 Heaping TBS Chopped Rosemary
  • 1 Bunch Red or Rainbow Chard
  • 1 Lemon
  • 4 Cloves Garlic, Chopped
  • 1/2 Red Onion, Chopped
  • 3 Vine Ripe Tomatoes
  • 4 Eggs
  • Maple Syrup


  1. Mix Waffle Batter, add cheddar & rosemary then follow your usual waffle making magic. I prefer using a stove stop silver dollar waffle skillet. Not science here, just pour and flip.
  2. In a non-stick skillet, saute 2 cloves of chopped garlic and red onion in 1 TBS olive oil until soft. Add in chopped chard and the juice of lemon. Stir on medium heat until wilted. Set aside.
  3. Preheat Oven 350, Slice tomatoes into 1 inch thick discs. Sprinkle with chopped garlic, olive oil and fresh black pepper. Place on oven sheet and roast for approx 10-15 minutes.
  4. In a 4 inch metal mold, crack egg on hot buttered skillet and cook until over easy.
  5. Assemble these adorable sammies and drench with some syrup love!

Number of servings: 4 mini (yet extremely filling) silver dollar waffle sandwiches

It might seem like too many steps at first glance, but I promise all is worthwhile come time of assemblage.

Also – exponentially more enjoyable while wearing slippers and accompanied by a milky cup of steamy tea.

Swap things up as you’s like, but the addition of maple syrup is key – bringing out the rosemary flavors like a boss. Savory, sweet…SCANDALOUS! Okay not really, but you’re going to be pretty pleased enjoying this mini masterpiece along side a freshly cracked magazine while turning up a morning soundtrack of your choice.
